Ingredients

2 16oz cans fava beans

1/2 medium onion

1 medium tomato

3 cloves pressed garlic

1/2 cup olive oil

juice from 1/2 lemon

2 tablespoons or more as you like it ground cumin

1 teaspoon or more as you like red chili pepper flakes

1/4 cup fresh parsley or mint

Preparation

In a large saucepan or cast iron skillet, sauté the onion and garlic for about 5 minutes. Add chopped tomatoes and cook for another 5 minutes.

Add the beans, cumin, chili pepper and stir. Simmer gently for about 10 minutes.

Remove from the heat, slightly mash the beans and blend with lemon juice and parsley.

Serve with pita bread and a plate of cubed feta cheese, olives, cucumber, hummus etc.
