Corn Tortillas
Preparation
Cut the corn tortillas into quarters to make wedges for chips; otherwise leave them whole. 2
Spread paper towels onto a work surface, and place the corn tortillas in a single layer on the paper towels. Cover the tortillas with another layer of paper towels.

Allow the corn tortillas to dry on the paper towels for about one hour. 4
Pour about 1 inch of oil into the skillet and warm the oil over medium-high heat for about five minutes. 5
Place a whole tortilla or three to four wedges into the oil. Leave the tortillas sizzling for about 30 seconds. 6
Flip the whole tortilla or the wedges with the metal tongs and cook them for an additional 30 seconds
