Ingredients
1 Cup Couscous (1/3 dry couscous steeped in 1 cup boiling water)
1 8oz can mandarin oranges drained (2 Tbls reserved)
1 head bib lettuce
4 Belgian endive crude cut
1/2 C mild feta cheese crumbled
2 stalks celery finely chopped
1/4 C minced italian parseley
1/4 C minced scallions
Dressing
1/3 Cup extra virgin olive oil
One Lemon
1 Tbl Rice Wine Vinegar
1/4 tsp salt
1/4 tsp hot sauce
1 tsp sugar
Reserved mandarin orange juice
Preparation
Soak couscous in boiling water. Let steep for 7 minutes.
Whisk dressing ingredients until emulsified.
Toss with lettuce, endive, mandarin oranges, couscous, feta cheese, scallions and parsely.
Serve immediately.
