Ingredients
1 1/2 cup old-fashioned oatmeal
1/2 cup raw almonds
1/2 cup raisins
1/2 cup dried cranberries
1 packed cup dried apricots
3 tbsp. golden flax seeds
1/2 cup chunky peanut butter
2 tbsp honey
2 tsp. cinnamon
1 tsp. nutmeg
2 tsp. vanilla
1 tsp. almond extract
pinch of kosher salt
2 tbsp. water
Preparation
Combine all ingredients in a food processor. Pulse until oatmeal and almonds are coarse textured and mixture begins to pull together. Line an 8X8 pan with aluminum foil. Press mixture flat using the bottom of a measuring cup. Cover with plastic wrap and refrigerate for several hours. Turn onto a cutting board and remove foil. Using a sharp knife, cut into 8 1" strips, then cut in half for 16 4X1 inch bars. Wrap individually in plastic wrap and refrigerate. Enjoy an all-natural, healthy breakfast bar or snack!
