Ingredients
16 oz fruit, pitted
3 T liquer
1/3 c sugar + 2 T
2 T melted butter
4 eggs
1/3 c flour
1 1/3 c milk
pinch of salt
1 tsp vanilla
Preparation
Pre-heat over to 425. Halve the fruit and pit. Toss with liquer and marinate for 30 minutes.
Butter 8- or 9-inch skillet or quiche pan, large enough to hold fruit in 1 layer. Sprinkle with 2 T sugar. Place fruit in dish pressing close together. Add any left over liquer.
Beat together eggs and remaining sugar. Add flour, salt, milk, vanilla and beat until smooth. Pour over fruit.
Bake 15 minutes, lower heat to 375F and bake for 15 - 20 min longer. Serve warm.
