Ingredients

2 large peaches chopped (2 c.)

1 egg white

½ c sugar

1 tsp vanilla

1 c plain yogurt

Preparation

Combine peaches, egg white, sugar and vanilla in large mixing bowl. Beat at high speed until light and almost doubled in volume (about 5 minutes). Fold in yogurt. Turn into a container, cover and freeze. Let soften ½ hour at room temperature before serving. Makes 4 servings.
