Ingredients

2 cups self - raising flour

½ cup whole-meal plain flour

½ cup caster sugar

1 ½ cups finely grated, firmly packed carrot

2 eggs

125g butter, melted

½ cup milk

1 tsp finely grated orange rind

½ cup orange juice

Frosting

250g cream cheese

¼ cup icing sugar mixture

2 tsp finely grated orange rind

Preparation

  1. Preheat oven to moderately hot. Grease 12-hole muffin pan.
  2. Sift flours and sugar into large bowl; stir in combined carrot, eggs, butter, milk, rind and juice. Spoon mixture into prepared pan. Bake in moderately hot oven about 25 minutes.
  3. Spread cold muffins with frosting, top with glace orange rind, if desired.
  4. Frosting Beat cheese, icing sugar and rind in a small bowl with electric mixer until smooth. Makes 12 Per Serving 17.2g fat; 1366kj
