Ingredients
Frisée salad
4 eggs
parmesan
truffle oil
white vinegar
pepper
Preparation
Wash the salad and put onto plates. Poach the eggs: Let water boil, add vinegar and wisk it until there is a hole in the middle, pour the egg into the hole, let cook for 3min. The white should be hard and the yolk runny. Mix a light vinaigrette into the salad. Put the egg on the salad. Cover with ground parmesan and truffle oil.
