Ingredients
1/2 pound kale ( 1/5 cups) … discard stems– cut in chiffonade
1.5 Tablesp. veggie oil
3 cloves garlic, peeled and very finely minced
3 large scallions, cut into 1/8 inch diagonal slices
2 and a 1/2 cups cooked brown rice
2 Tablespoons soy sauce
matchstick carrots and edamame
Preparation
cut kale in half lengthwise and then cut crosswise into very thin ribbons ( chiffonade). steam kale for 7 mins. meanwhile, heat veggie oil in a large saucepan over medium low heat and add garlic and cook stirring for 2 mins… don’t brown it raise heat to medium and add the steamed kale and scallions and edamame and carrots cook for 2 mins, then add rice and cook for another 2 mins add soy sauce and cook for 30 secs more
