Ingredients

4 eggs

a couple scallions, chopped

3/4 cup peas,(or other frozen veggie)

3 tb veg. oil

4 c rice (long grain works best)Cook it.

Preparation

Beat the eggs and add the some of the scallions. Steam the peas briefly.

Heat your pan up with the oil but not too hot. Reduce the heat, add the egg mixture and scramble. Add the cooked rice. Add salt. Add peas and the remaining scallion. Stir fry for one minute. serves 4
