Ingredients

2 red potatoes

2 T. butter

2 T. Extra Vargin Olive Oil

1 T. dill weed

1 clove garlic, mashed

1/2 tsp. thyme

salt and pepper

Preparation

Peel potatoes. Cut into 1" square pieces. Boil for 15-20 min. Until just starting to soften. Heat a frying pan. Melt butter and add olive oil. Add potatoes. Sprinkle on spices. Watch closely and turn when starting to brown. Fry about 7 or 8 min. Serve immediately or keep warm in 250 degree oven.
