Ingredients

3/4 cup rice flour

3/4 cup corn meal

1 tsp salt

2 tsp fg blk pepper

2 tsp ground cumin

1 tsp paprika

Mix these together well.

1 cup half and half 1/2 cup beer 1 TBSP hot pepper sauce

Mix these together well and have someone finish the beer!

1 pint oysters, drained

For the Cocktail Sauce:

1 cup catsup

1/4 cup horseradish 2 Tbsp lemon juice

1/2 cup chopped parsley

S & P, to taste

1/4 cup minced onions

Preparation

Deep fryer or “fry daddy” , pre-heated to 350 degrees F. Canola oil works well for home use in this recipe.

Put oysters in liquid and drain well, then dip in rice flour/corn meal mix and cook in fryer until golden brown. Drain on paper towels. Keep warm in pre-heated oven if desired. Repeat with other half of oysters. Serve with cocktail sauce.
