Ingredients
Fried Green Tomatoes:
3 Green Tomatoes, sliced 1/2"
1/2 Cup Flour
1 Egg, Beaten
1 Cup Fresh,Dry Breadcrumbs
Salt and Pepper
2 Tablespoons Olive Oil
Relish:
Avocado, diced
Peach, diced
Kiwi, diced
1/2 Serrano Pepper, minced
1 Shallot, minced
1 Lime, juiced
1/4 Cup Fresh Pomegranate Seeds
2 Tablespoons Chopped Cilantro
1 Tablespoon Honey
Salt and Pepper to taste
Preparation
Avocado and Fruit Relish: Mix all ingredients together and chill until ready to serve or serve immediately.
Fried Green Tomatoes: Sprinkle tomato slices with salt and pepper and set aside for ten minutes.
Heat oil over medium heat. Dip tomato slices into flour, then egg, then breadcrumbs. Place in hot oil and fry until golden brown on both sides. Top with generous dollops of relish and serve hot.
