Ingredients

4 slices bacon, cut up and fried

1 small green pepper, chopped

1 1/2 T. onion, finely chopped

2 large red potatoes, peeled, cubed

1/2 C. grated cheese (Cheddar or Mozzarella)

4 eggs

salt and pepper to taste

Preparation

Fry bacon until crisp. Keep 2 T. bacon fat. Fry potatoes, then add green pepper, onion, salt and pepper. Fry until golden brown. Sprinkle cheese over potatoes and stir. Break eggs over potatoes and cook over low heat until eggs are set, stir constantly. Serves 4
