Ingredients

2 eggs (or 1-2 eggs for every person you’re serving)

2 cup leftover stuffing (about a cup per person)

Salt to taste

2 tbsp cooking oil

Preparation

Heat non-stick skillet on medium high. Add stuffing. Cook until heated through, stirring occasionally (about 5 mins). Transfer to plates.

In same pan add oil. Crack eggs into pan. Add desired salt. Fry until yolk is medium firm, flipping one (about 3 mins). Top stuffing with eggs.
