Ingredients

1 egg

2 - 3 leaves romaine lettuce, chopped

1/4 cup chopped tomato

1/4 cup diced avocado (optional)

1 - 2 slices whole grain toast

1 teaspoon extra virgin olive oil

butter for the toast

salt & pepper

Preparation

  1. Place the lettuce and optional salad ingredients on a plate or pasta bowl.
  2. Toast & butter the bread then cut into bite sized pieces and garnish around the salad.
  3. Fry an egg and place on the salad. Note: You can use any salad ingredients that you like. I prefer to keep this dish simple and enjoy the clean, natural flavors. You don’t need a salad dressing as the olive oil, salt & pepper and the egg will more than make up for it.
