Ingredients
Gravy:
1 TBL Olive oil
1/2 lb chorizo
1C chopped onion
1 TBL flour
1 1/2 tsp worchestershire
2 C cream
1 C milk
2 chopped green onions
1 TBL thyme - fresh
1 TBL chopped serrano chile
Fried chicken:
6 chicken breast halves
2 cups buttermilk
Poblano Mashed potatoes:
2 lg chared & peeled, seeded and choped chilies
4 lb red potatoes cubed
1 C 1/2 & 1/2
1 stick butter
1 C sour cream
1 TBL ea salt & pepper
Preparation
gravy: saute chorizo & onion in olive oil, add flour and worchestershire, cream milk & simmer until thick. Mix in green onion chilis and thyme, salt & pepper - 2 min.
Chicken: marrinate in buttermilk 4 hrs or overnight. Dredge in flour, salt & pepper and fry in 1 1/2" oil at 375. turn once, about 8 min.
Potatoes: heat 1/2 & 1/2 and butter, when melted add to cooked potatoes and mash, stirr in sour cream and chilies.
