Ingredients

4 fried skinless boneless chicken breast fully cooked from your local deli’s grocery store.

6 cups salad greens, washed and drained ( I like the mesculin mix)

1/2 cups dark raisins

1/2 cup chopped celery

1/2 cup prepackaged candied walnut pieces

1/2 cups crumbled goat cheese

Curry Honey Dressing

1 cup mayonnaise

1/2 cups honey

1 Tablespoon fresh squeezed lemon juice

1/2 Tablespoons Curry Powder

1/2 teaspoon salt

1/4 teaspoon pepper

Preparation

Cut fried chicken breast into strips. Place 1 1/2 cups of salad greens onto each salad plate. Garnish each salad plate with 1/8 cup of raisins, celery, walnuts and goat cheese. Combine all dressing ingredients into a small bowl and wisk until smooth and creamy. Drizzle each salad with dressing and serve.
