Ingredients
1-3/4 lbs catfish fillets
2 tbsp prepared mustard
2/3 cup yellow cornmeal
1/2 tsp salt
1/2 tsp pepper
1/4 tsp ground red pepper
shortening or cooking oil
Preparation
Spread catfish with a thin coating of mustard. Combine cornmeal, salt, pepper and red pepper in a plastic bad. Add fish; shake to coat. Heat shortening or cooking oil to 375 degrees in a deep 12" skillet. (Be sure skillet is no more than half full of oil.) Fry fillets, two at a time, until fish is golden brown, about 4 minutes. Drain on paper towels. Serve hot.
