Ingredients
4 cups thinly sliced zucchini
1 cup sliced celery
1/2 cup fressh mushrooms
1/4 cup chopped green pepper
1/2 cup sliced ripe olives
1/4 chopped sweet red pepper
1 cup pico del gallo
3 tablespoons sugar
1/2 teaspoon oregno
1 minced glove garlic
1/2 cup vinegar
3 tblespoons olive oil
fresh lettuce leafs
Preparation
In a large mixing bowl, combine first six ingedients and toss to mix. In a small bowl, combine remining inredients, except lettuce, and blend well. Pour over vegetables, cover and chill several hours. Serve in large salad bowl
