Ingredients

1 tsp EVOO

1 small onion chopped

1 garlic clove minced

3/4 cup uncooked pearl barley

1 3/4 cup chicken broth

1 chopped zucchini

1 1/2 cups halved cherry tomatoes

1/4 tsp kosher salt

1/4 tsp ground black pepper

2 tblsp crumbled feta cheese

Preparation

Heat oil in large dsucepan over medium-high heat, add nion and garlic and saute 2 minutes. Add barley cook 1 minute. Stir in chicken borth and bring to a boil. Cover, reduce heat, and simmer 30 minutes. Stir in zucchini, tomatoes, salt and pepper; cover and cook 5 minutes. Put 1 cup of barley into each of 4 bowls, top each with 1 1/2 tsp of feta cheese.
