Ingredients
8-10 plum (Roma) tomatoes, chopped in small squares
1/2 cup virgin olive oil
3 cloves garlic, mashed
3 tsps Kosher salt
1 cup fresh chopped basil
1/4 tsp freshly ground pepper
3-4 green onions, cleaned and chopped
1 lb thin spaghetti or bowtie pasta
Preparation
Pour olive oil into large bowl and add chopped tomatoes. Mash garlic w/ salt and put in bowl. Cut basil into confetti-sized pieces and add to bowl with pepper. Set aside for 2-3 hours (not in fridge). Cook 1 lb. pasta; drain and toss with tomatoes. Serve w/ grated cheese if desired.
