Ingredients
2 fresh tomatoes
1 small red onion
2 scallions
1 clove garlic
1/2 jalapeno chile pepper, seeded and minced
3 tablespoons chopped cilantro
3 tablespoons fresh lime juice
Preparation
Chop the tomatoes and red onion into equal-sized pieces. Finely chop the scallions, including green portions. In a mixing bowl, stir together all ingredients. Serve immediately or refrigerate in a tightly covered container for up to 3 days.
