Ingredients
12 roma tomatoes (peeled and rough chopped)
1 bunch of fresh basil (chiffonaded)
2 T chopped garlic
1/4 c toasted pine nuts
1/4 t dried oregano
tiny pinch of crushed red pepper
about 1/2 t sugar
2 T no salt butter
1/3 c Olive Oil
3/4 box Penne
Preparation
Saute garlic briefly then add tomatos, pepper & oregano cook until sauce is cooked down to chunky (about 5 - 10 minutes). Taste and remove acidity with just enough sugar. Salt to taste. Add butter and melt and then quickly add cooked pasta and toss. Check salt again keeping in mind that parm will add some saltiness. Plate and add pine nuts and lots of fresh parm'.
