Ingredients

3.5 cups flour

4 extra large eggs

.25 tsp salt

.5 tsp extra virgin olive oil

Preparation

Mound flour on a large surface. Make a well in the center and add the rest of the ingredients. Stir them up, incorporating flour from sides until the dough is the right consistency. Knead the dough a bit. Form it into a ball and cover in plastic to rest for 30 minutes. Roll it out and cut it into .25-inch thick strips. Add to boiling water for 6 to 8 minutes.
