Ingredients

1 box Dreamfields lingune

1 1/2 packages of diced prosciutto (you can use Serano ham or crisp bacon as well)

3 bags of baby spinach

1 bunch baby arugula

2 limes - juice and zest separated

2 cups crumbed feta cheese

Salt and Pepper to taste

2 shallots small dice

2 cloves garlic minced

4 tablespoons of good Extra virgin olice oil separated (extra on the side)

Preparation

In large pot saute prosciutto in 1 tablespoon of olive oil, once it starts browning add garlic and shallots - stir for 1 min -make sure garlic does not burn. Cook pasta till it is just done

Add lime zest to meat and remaining olive oil till you think there is enough for a sauce remmember the meat may have rendered so you may need less oil

Add salt and pepper to taste and then add drained pasta to pot, turn heat off. Add spinach and argula to pot stir to wilt then add line juice.

Serve with feta cheese on top.
