Ingredients

2 lbs. fresh salmon

1/2 cup fresh bread crumbs

1 egg

2 scallions, thinly sliced

finely grated zest of 1 lemon

2 tablespoons chives

1 tablespoon minced garlic

1 tablespoon olive oil

1-2 dashes Tobasco sauce

salt to taste

6 sesame seed hamburger buns

Preparation

Coarsely chop salmon by pulsing in food processor. Combine the remaining ingredients with the salmon. Form into 6 patties. Grill 3-4 minutes on a side. Serve on toasted buns with tartar sauce or a mixture of mayonnaise and dijon mustard, lettuce and tomatoes.
