Ingredients

1/2 large onion (or 1-2 leeks)

1/2 lb fresh potatoes

1/2 lb fresh root veggies (could be any combination of turnips, celeriac, sunchokes, parsnips, carrots, beets, radish in small quantities)

salt and pepper to taste

olive oil

Preparation

Run onion and all root veggies through the food processor with grater attachment. Drizzle olive oil in the bottom of a large frying pan. Add grated veggies and salt and pepper. Cook on medium heat until brown and then flip. Cook until brown and then serve.
