Ingredients
1 unbaked 8" pie shell
3 fresh peaches, about a pound
1 C sugar
2 Tbsp melted butter
2 med eggs - lightly beaten
1/2 tsp vanilla
Preparation
Preheat oven to 350 degrees. Peel and remove pit from peaches. Cut into halves and arrange pitted side down, in one layer in the bottom of the pie shell. Set aside. Mix sugar, melted butter, eggs and vanilla in a small bowl. Pour mixture over peach halves. Bake 50 minutes at 350. Pie will look brown and crusty on top. Center should be set, and peaches should be tender when pierced with fork. Note: if using larger peaches, cooking time may be longer.
