Ingredients

1 tsp + 2 Tbsps margarine

2/3 cup sugar

2 Tbsp flour

1/2 tsp cinnamon

4 large peaches, peeled and cut into 1/2" slices or 3 cups of fresh fruit and/or berries combined

BATTER

1/3 cup margarine, softened

1 egg, beaten

1 cup flour

2 Tbsp sugar

1-1/2 tsps baking powder

1/2 tsp salt

3 Tbsps milk

Preparation

Grease a 9" round cake pan or pie pan with the tsp of margarine. The pan should be at least 2" deep.

In a bowl, comgine the sugar, flour and cinnamon. Drop the peach (fruit) slices and toss to coat. Arrange the fruit in the bottom of the prepared pan and dot them with the remaining 2 Tbsp margarine.

Batter: In a large mixing bowl, cream the margarine until it is light and fluffy and then blend in the beaten egg.

Combine the flour, sugar, baking powder and salt and sift them into the margarine mixture alternately with the milk.

With a rubber spatula, spread the batter over the fruit, distributing it as evenly as possible.

Bake in 350 degree oven for 30-40 mins until brown.

Serve warm
