Ingredients
1 1/2 cups fresh peas
1 cup fresh mint
salt and pepper to taste
1/2 Tbs fresh lemon juice
1/4 cup good quality olive oil
1/4 cup finely grated Parmesan or similar cheese
Preparation
mix using a pestle and mortar
Mash up peas with mint, salt, pepper, and lemon juice. slowly add just enough olive oil to get everything combined and to a nice texture. add in finely grated Parmesan cheese.
