Ingredients
400 g Flour
4 Eggs (beaten)
1 Tbsp Oil
1 tsp Salt
Preparation
Sift the flour and salt into a board and make a well in the centre. Add the lightly beaten eggs and oil into it, a little at a time. Gradually work in the flour, using your hands until the mixtures comes together in a firm dough. Knead for at least 10 minutes until the dough becomes smooth and elastic. Cover with cling wrap and allow to stand for at least 5 minutes.
Divide the dough into 4 sections and flour lightly. Roll through a pasta machine, from widest setting throught to narrowest or desired thickness. Cut to required size.
Cook in boiling salted water, until al dente.
