Ingredients
2-3 Medium-large green or firm red tomatoes, seeded then chopped into about 1 inch pieces.
1/2 c. Vidalia onion, chopped into about 1/2 inch pieces.
1/2 c. Green or red bell pepper, chopped same as onions.
1 Jalapeno pepper, finely chopped (with or without ribs/seeds, depending on hotness preferred.
1 can drained chick peas.
1 c. cooked edamame, drained and chilled.
1 T. Cilantro, chopped
1 T. parsley, chopped
1 T. Basil, cut in chiffonade
Juice of 1/2 lime
2 T. of White Balsamic vinegar
Salt to taste
Preparation
Mix all ingredients together in large bowl. Refrigerate for at least an hour for the flavors to meld.
