Ingredients
1 6-ounce disk fresh goat cheese
2 large, unsprayed fresh grape leaves (if unavailable, use vine leaves packed in jars, rinsed to remove the brine)
Olive oil for brushing
Slices of country bread, toasted
Fresh fruit, such as pears or figs
Preparation
Place one leaf, vein side up, on a work surface. Place goat cheese on leaf and wrap leaf against cheese, pressing it in slightly. Top with another leaf, vein side down. Wrap leaf around cheese, enclosing it fully. Tie with kitchen twine and set aside, or refrigerate until ready to grill.
Heat a grill or grill pan to medium hot. Brush the leaf-wrapped cheese with olive oil. Toast on the edge of the grill until warmed; turn and grill the other side. The cheese should be slightly melted.
To serve, place the cheese on a platter and cut the kitchen twine. Surround with toast and fresh fruit.
