Ingredients

20 oz package refrigerated cookie dough

8 oz package light cream cheese

1/3 c sugar

1 t vanilla extract

1/2 fresh pineapple

2 peeled and sliced kiwis

1 peeled and sliced banana

1/4 c raspberries

1/4 c apricot jam, melted

Preparation

Preheat oven to 350 degrees.

  1. Press cookie dough into 14" pizza pan. Bake 12 - 15 minutes, until browned and puffed. Cool.

  2. Beat cream cheese, sugar and vanilla until blended. Spread over cooled cookie.

  3. Twist crown off pineapple. Cut pineapple in half lengthwise. Refrigerate 1/2 for another use. Cut other 1/2 into thin wedges.

  4. Arrange pineapple around the outer edge of the cream cheese, Arrange kiwi inside pineapple, overlapping pineapple slightly. Continue with banana and raspberries in the center.

  5. Brush with jam and serve.
