Ingredients

1/2 cup fresh corn kernels

1/2 cup fresh green peas

1/2 cup grated zucchini

1/2 cup grated carrot

1/4 cup minced scallions

1/4 cup fine dice red bell pepper

1 large clove garlic, pressed

2 large fresh eggs, lightly beaten

1/4 cup all-purpose flour

1/2 tsp baking powder

1/3 cup shredded cheddar cheese

Herb Topping

1/2 cup Greek style plain yogurt

1/2 cup creme fraiche

1/4 cup mixed fresh herbs, such as chives, parsley, thyme, rosemary

1/2 tsp ground peppercorn blend

1/2 tsp Dijon mustard

garnish- lemon zest

Preparation

In a mixing bowl combine the corn, peas, zucchini,carrot, scallions,bell pepper and garlic.Stir in the eggs then fold in the flour, baking powder and cheese till well mixed. Heat a large skillet sprayed with vegetable spray.Drop heaping Tbsp of the vegetable mixture onto the skillet.Flatten slightly and cook over medium high heat 2 minutes per side or till nicely browned.Repeat as needed to use all the batter. Combine the ingredients for the topping in a small bowl till well blended; dollop onto each serving of fritters; garnish with the zest
