Ingredients
1 small orange, unpeeled, sliced
2 cups orange juice
scant 2 cups sugar
2 tbsp plus 2 tsp fresh lemon juice
2 12-ounce bags cranberries
Preparation
- Finely grind orange in processor. (Or chop orange finely.)
- Combine orange juice, sugar, and lemon juice in large saucepan.
- Bring to boil, stirring until sugar dissolves.
- Reduce heat and simmer 5 minutes.
- Add ground orange and cranberries and cook until berries begin to pop, stirring occasionally, about 8 minutes.
- Remove from heat and cool completely.
- Refrigerate. Serve cold.
Can be prepared up to 4 days ahead.
