Ingredients
Fresh Corn Salad
8 to 10 ears fresh white corn
4 cups water
½ to 1 tsp sugar
1/3 cup finely chopped purple onion
1 large green pepper chopped
1 large red bell pepper chopped
8 0z. Monterey jack cheese cut into small cubes
2 TBSP. olive oil
½ tsp. salt
¼ tsp + cumin
¼ tsp pepper
¼ tsp cayenne
Preparation
Cut kernels off corn. Combine water and sugar and bring to a boil. Add corn, simmer 10-12 minutes.Drain and rinse with cold water. Drain on paper towels, pat dry.
Combine all ingredients. Let stand 30 minutes, or cover and refrigerate 8 hours.
*You can microwave the corn still in the husk, and shuck with hot mitts, the silk comes right off, or steam it on the cob, just don’t over cook.
