Ingredients
1 1/2 c. chopped pecans
1/2 c. butter, melted
2 c. sugar
2 large eggs
1 tsp. vanilla extract
2 c. all-purpose flour
2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. salt
2 1/2 lb Granny Smith or MacIntosh apples (about 4 large)peeled and cut into 1/4 inc. thick wedges
Can top with w/ Caramel glaze
Preparation
- Preheat oven to 350. Bake pecans in a single layer in a shallow pan 5 to 7 mins. or until lightly toasted and fragrant, stirring halfway through.
- Stir together butter, sugar,eggs and vanilla extract in large bowl till blended
- Combine flour, cinnamon, baking soda, and salt stirring until blended. Stir in apples and 1 cup pecans (Batter will be very thick, similar to a cookie dough.) Spread batter into a lightly greased pan (13x9 or 7x11)
- Bake at 350 for 45 mins or until a wooden pick inserted in center comes out clean. Cool. Frost or add caramel glaze.
