Ingredients

1/4 wedge of fresh cabbage

1 medium onion

2 skinless and boneless chicken breasts

2 Tablespoon cooking oil

1 Tablespoon soya sauce

1 Tablespoon hoisin sauce

1 jalapeno pepper (optional)

Preparation

1.Slice cabbage into slivers or julienne about 3 inches long and 1/2 inch wide. 2.Slice onion into slivers about the same size as the cabbage. Mince the jalapeno peppper. 3.Cut the chicken breasts into slices. In a medium bowl, marinate the chicken slices with the soya sauce. 4.In a hot wok or skillet, heat 1 tbsp. of oil on high. Add the jalapeno pepper if using and stir a bit. Then add the chicken pieces. Turn down to medium and stir fry for about 3 minutes. Put the chicken on a clean dish and put aside. 5.Add 1 tbsp. of oil onto the same skillet and turn to high until oil is hot. Add all of the cabbage and onions and stir fry for a minute. Add the chicken with the cabbage and cover and turn to medium high for about 5 minutes. Add the hoisin sauce and stir fry and cover to cook more if desired. Add a bit of water if the skillet is drying out.
