Ingredients
1 finely chopped onion
1 clove garlic
1 tsp Mediterranean oregano
1 tsp coarse black pepper
1 tsp sea salt
2 cups garlic and butter
croutons
4 slices of mozzarella cheese
4 cups organic beef broth
1 Tbsp olive oil
Preparation
Heat olive oil in pan and add onion and garlic. Cook until onions are translucent. Then add beef broth and spices, simmer for about 10 mins.
Put soup in 4 ramekins, 1 cup in each. Place about 1/2 cup of croutons on top, then lay cheese over croutons. Place in oven and broil for 1-2 mins.
