Ingredients
3 tablespoons Butter
1 tablespoon Olive Oil
6 medium Yellow Onions, sliced thin
1/2 teaspoon Sugar
3 Tablespoons Flour
8 cups Beef or Chicken Broth
Grated Parmesan Cheese
Toasted French Bread Slices
Preparation
Heat butter and oil, over medium heat, in a 6 quart pot. Add onions; toss well to coat. Reduce heat to low; cover; cook 15 minutes until onions are wilted. Increase heat to medium; stir in sugar. Cook, uncovered, for 40 minutes. Stirring frequently until onions are deep brown. Stir in flour; continue to cook until flour turns color of the onions, about 5-8 minutes. Stir in broth. Cover and bring to a boil. Reduce heat to low; partially cover; simmer for about 30 additional minutes, stirring occasionally. Pour into individual oven safe bowls; top with french bread and cheese. Broil until cheese melts.
