Ingredients

Same ingredients as Peppermint Ice Cream, except omit the vanilla and crushed peppermint candy.

Instead use:

20-25 sprigs of fresh mint from the garden, washed and dried on a paper towel.

10-15 Thin Mint cookies

Preparation

  1. Begin with same preparation as the Peppermint Ice Cream through step 6.
  2. Slightly bruise or hand-crush 12 sprigs of mint and add to the hot custard.
  3. Chill the custard a couple hours or overnight for best volume.
  4. Remove sprigs of mint from chilled custard. Mix together custard, cream, and half-and-half in large pan. (Optional) Finely mince 6-8 mint sprigs, leaves only, and add to custard.
  5. Pour into ice cream churn and churn until done (20-30 mins depending on ice & salt mix).
  6. When serving, garnish with a fresh sprig of mint and a Thin Mint cookie. Enjoy!!!
