Ingredients

2 tbsp. olive oil

1 medium onion, finely chopped

1 clove of garlic, finely chopped

8-10 plum tomatoes, halved lengthwise

2 tbsp. chopped parsley

salt and pepper

Preparation

  1. Preheat oven to 350

  2. Layer in a baking dish in the following order: olive oil, onion, garlic, tomatoes, parsley and salt and pepper. Bake for about 45 minutes to 1 hour
