Ingredients

230 grams pasta of your choice (whole wheat for a high fibre dish)

1 medium red pepper

1 medium yellow pepper

1 medium orange pepper

1 ounce extra virgin olive oil (give or take a bit)

2 cloves garlic

2 teaspoons dried chili pepper (or to taste)

1/2 cup grated parmesan (or to taste)

salt and pepper to taste

Preparation

Boil pasta according to instructions on package.

As pasts is cooking, cut red, yellow and orange pepper into long, thin strips (julliene style)

Put peppers in a frying pan on medium heat and add oil, garlic, and chili peppers. Add salt and papper to taste.

Saute peppers until they are tender (should finnish by the time your pasta is cooked).

Mix pasta, pappers and parmesan together and serve.
