3 LBS CHICKEN CUT INTO SERVING PIECES
40 CLOVES FRESH GARLIC,PEELED AND LEFT WHOLE
1/2 CUP WHITE WINE
1/4 CUP DRY VERMOUTH
1/4 OLIVE OIL
4 RIBS CELERY,CUT INTO 1 INCH PIECES
2 T. FINELY CHOPPED PARSLEY
2 t. DRIED BASIL
1 t. DRIED OREGANO
PINCH CRUSHE RED PEPPER
1 LEMON

Preparation
PREHEAT OVEN 375 PLACE CHICKEN SKIN UP IN SHALLOW BAKING PAN. COMBINE GARLIC,W/WINE,VERMOUTH,OIL,PARSLEY,BASIL,OREGANO,AND RED PEPPER. POUR OVER CHICKEN. SQUEEZE LEMON JUICE OVER CHICKEN S/P. COVER WITH ALUMINUM FOIL AND BAKE FOR 40 MINUTES. REMOVE FOIL AND BAKE FOR ANOTHER 15 MINUTES. ENJOY!!!!
