loaf (12 inch) French bread, cut in half lengthwise

1/4

cup garlic-and-herbs spreadable cheese (from 4- to 6.5-oz container)

cup thinly sliced mushrooms

1

cup thin strips red, green or yellow bell pepper

1/2

cup julienne (matchstick-cut) zucchini (2x1/4x1/4 inch)

1/3

cup sliced ripe olives

Olive oil cooking spray or regular cooking spray

teaspoon Italian seasoning

1/2

cup shredded reduced-fat mozzarella cheese (2 oz)

Preparation

Heat oven to 450°F. Line 15x10x1-inch pan with foil. Place bread halves, cut side up, in pan.

Spread spreadable cheese evenly over each bread half. Arrange mushrooms, bell pepper, zucchini and olives evenly over top. Spray gently with cooking spray. Sprinkle with Italian seasoning.

Bake about 15 minutes or just until vegetables begin to brown. Reduce oven temperature to 425°F. Sprinkle cheese over pizza.

Bake at 425°F about 5 minutes longer or until cheese is melted. Cut each bread half in half crosswise. Wrap each serving securely with foil; take with you for an on-the-go dinner.
