2 C fresh basil leaves
1/2 cup light, fruity olive oil
2 T pine nuts
2 med. cloves garlic, lightly crushed and peeled
1/2 tsp. kosher salt (or more to taste)
1/2 C freshly grated parmesan cheese (opt.)
2 T freshly grated pecorino romano cheese (opt.)
3 T softened butter (optional)
Put the basil, olive oil, pine nuts, garlic and salt in a blender. Pulse till evenly blended.
To use later, refrigerate or freeze. To use immediately, scrape it into a bowl and stir in the cheeses by hand, if using. After the cheese has been incorporated, beat in the softened butter,if you like.
