Ingredients
fluke or flounder fillets
fresh baby spinach
feta cheese
shallots
herb de provence
olive oil
butter
Preparation
saute one shallot in 2 tbsps of butter and 3 tbsps. of olive oil. When shallot becomes clear add one package fresh baby spinach and saute. Season with herb de provence and fresh pepper. Place fish in shallow baking dish and cover with spinach. Top with crumbled feta cheese. Back at 325 for 1/2 hour or until cheese is slightly browned.
