Ingredients

1 1/2 Cups Sugar

6 eggs whites

pinch of salt

Preparation

Combine Sugar, Egg Whites and pinch of salt into top of double boiler. Mix with stand mixer or hand held, or even by hand with paddle till smooth and well combined. Place this mixture over the double boiler. Stir and heat till hot to touch. About 7 min.

Pour into mixer and whip at high speed till cool. A dash of cream of tarter can be added at this point if wanted. Mixture will become very white and and many times original volume holding its shape. (I have been known to hold ice to the side of the bowl to help cool it down if I were in somewhat of a hurry).

Additions: Coloring, vanilla or other flavorings can be added.
